Gianfrancesco Valsé Pantellini (1917–1999), often cited as Vals Pantellini, was an Italian biochemist from Florence. He is best known for having formulated a preparation of potassium ascorbate that his followers refer to as the "Pantellini method".

Valsé Pantellini was born in 1917 in Rufina, a town in the province of Florence, Italy. He worked as a biochemist in the Florence area and died in 1999 in Vicchio.
Work
Valsé Pantellini is credited with developing a formulation of potassium ascorbate in which the compound is prepared from two separate components—potassium bicarbonate and L-ascorbic acid (vitamin C)—combined at the time of use. This preparation, marketed and popularized after his death under the name of the "Pantellini method", has been promoted by his supporters as a dietary supplement and complementary approach. The formulation and the claims associated with it remain outside mainstream medical acceptance.
